Organics with Altitude is a farmer-led initiative, spearheaded by Tipperary farmer Joe Condon and supported by the Department of Agriculture, Fisheries and Food.
Dr. Oliver Moore and Joe Condon will outline the current farming, food and hill farming reality while also explaining how Joe Condon's farming and food business model deals with these tough realities. In short, Condon's is a low cost farming and food business model, which is specifically suited to the geographical and economic realities of the uplands
They will also outline in detail Joe Condon's production protocol encompassing best practice in the whole food system: production, processing, distribution, marketing and retailing. Each stage will feature in detail in the afternoon presentations.
A particular emphasis will be on animal husbandry and farm management, disease prevention, the sourcing of suitable organic stock, artisan butchering and keeping costs down. The importance of organic certification, as well as the benefits of mixed and direct retail outlets will also feature.
